Award winning winemaker Shaun Frohn and his team combine the science and the art of wine making to produce a variety of wines for more than 40 local wineries from all over California.
The wine making process starts with the grapes which are delivered to the facility by the truckload. From there, the staff goes through the painstaking process of cleaning and sorting the fruit by hand. The grapes go through several pressing processes, then the liquid is pumped into tanks and transferred into wood and steel barrels. Any left over wine is stored in glass bottles and used to top off the other containers as necessary. Not one drop is wasted.
“We produce wine from grapes throughout the state as well as local vineyards,” Shaun explained. “This service is called “Custom Crush by the governing agency and it allows small producers to create a commercial product that can be sold with the proper licenses and permits without the expense of storing and maintaining their own equipment. Lot sizes vary depending on what the winery requires. There is a minimum of 60 gallons, which equals one barrel with each barrel containing 300 bottles or 25 cases of wine. When it’s time to transfer the wine into bottles, we call in a special bottling truck from Mission Bottling and invite club members to label and cork the various wines.”
“We take great pride in the fact that many of our clients enter their wines in competitions, not only locally in Ventura County, but all over the state. Eight of our clients were award winners in the San 2014 Francisco Chronicle Wine Competition.”
Among the winners were Sven Hagen’s “Cowboy Syrah” – 2011 Santa Rita Hills Syrah was awarded Best Of Class. Milt Arenson – Calabasas Vineyards received the Double Gold for their 2010 “Quatro Ninos” Cabernet Sauvignon and Shaun’s own Consensio Cellars won three Silver awards for his 2012 ‘892’ Pinot Noir, Carneros, Napa Valley, 2012 ‘115’ Pinot Noir, Carneros, Napa Valley and 2012 ‘VLF’ Proprietary White.
