I have been going stir crazy during the COVID-19 quarantine. So, I looked for something to keep me busy. Something to provide a creative outlet for my overactive mind. I began creating new vegetarian and vegan recipes at an alarming pace. Alarming because the refrigerator was overflowing with leftovers (good leftovers to be sure).
The results of my stir-crazy efforts are included in this cookbook. Look for recipe #13 Parmesan Pull-Apart Bread. It is easy to make and super tasty. Or turn to recipe #20 Simple Eggplant Casserole for comfort food at its best.
My favorite is #10 Grilled Manchego Cheese Sandwich. The combination of the aged sheep’s milk Manchego, grilled corn, and pickled jalapeno slices can’t be beaten. Give it a try.
My least favorite recipe is titled “Quarantine Silliness.” I was really going crazy one day, and this recipe is what I created to keep busy. It’s not a “keeper,” but the concept is kinda fun. Look for recipe #19 to see what I mean.
Most of these new recipes are comfort food, plain and simple, and seem fitting for the times. May you eat well, eat local, and eat fresh!
