Fresh Zucchini and Tomato Saute




cheap arial,sans-serif;”>3 to 4 cloves of garlic diced

3 to 4 zucchini sliced thin

2 to 3 large tomatoes  diced

Fresh basil (I use 10 or so leaves cut into small pieces)

Salt and fresh ground pepper

Saute garlic.  Add remaining ingredients.  Saute.  Turn down heat.  Cover and simmer for 15 minutes or until tender.

    If you want to know what to do with those overgrown Zucchini Squash, they stuffing them and putting them under the broiler.


    1) One over grown ZS split length wise.
    2) Scoop out the soft insides and keep half of them; discarding the rest.
    3) Mix remaining insides with lean ground beef, onion, garlic and tomato sauce.
    4) put the two sides of the ZS together with water soaked tooth picks with the mix as the stuffing that has been cooked in a sauce pan.

    5) put under the grill and cook until the ZS is done to the point where a fork can easily pierce the ZS.
    6) slice into equal parts and serve.
