Recipe of the Week: Mini BLTs (Appetizer)

Ingredients:
Cherry tomato
1 lb. Bacon
Mayonnaise
Mustard
Parsley

Directions:

1) Cut the top off each tomato and hollow out the inside
2) Cook all the bacon. I like to put all the strips out on a cookie sheet and bake at 375 degrees until done (while I’m hollowing out the tomatoes)
3) when bacon is done, chop into tiny pieces.
4) in a mixing bowl, mix bacon pieces, mayo, and mustard, to taste. I like honey mustard sometimes.
5) spoon the mix into the hollowed out tomatoes.
6) Garnish with diced parsley
