Recipe of the Week: Baba Ghanouj (Eggplant Dip)

2 medium size eggplants
½ cup lemons juice
1 clove of garlic
Finely chopped parsley
1 Tablespoon Tahini
1/2 teaspoon of salt
Olive oil

Instructions:

Place eggplants on cookie sheet and bake at 350 until done and very soft.
Remove from oven and let cool. Peel eggplants and place into a bowl, and mash. Add all remaining ingredients (Mash garlic, Tahini & Salt) then mix. Add olive oil on top, garnish with parsley and serve.
