Recipe of the Week–Best ever homemade pasta sauce

1 lb. ground beef or ½ lb ground beef and ½ lb ground pork

1 onion finely chopped

3 stalks of celery finely chopped

3 cloves of garlic finely minced (optional)

1 can tomato paste

1 large can crushed tomatoes

1teaspoon salt (optional)

1teaspoon black pepper

½ to 1  cup red wine( drink the rest with dinner ) or not

¾ cup broth, or use all broth and no wine or water

¼ cup chopped parsley (optional) I don’t always have parsley

2 teaspoons sugar (optional) however I find that this helps cut the acidity of the tomatoes.

Or you could use a tablespoon of vinegar, if it is sweet it would work well.

Directions

Saute onion and celery for a 5 minutes stirring so not to burn, add garlic continue to cook for a few more minutes until soft. Add meat and cook stirring to break up large pieces. Cook 5 minutes. At this point you may want to drain off Any grease, sometimes there is not much depending on meat. Now add tomato paste stir well, add crushed tomatoes, wine, broth or water. Bring to simmer on low heat (never Boil) simmer for about 40 minutes, less if you’re in a hurry.

Just before serving over pasta or stirred into pasta, your preference, add parsley and a good grating of Parmesan cheese.

Stir well. Extra grated cheese may be added when served also red pepper flakes for a little spice.
