Recipe of the Week: Curry Chicken Salad–Cooking for hot summer nights

Using leftover chicken or buy a rotisserie chicken from your local market is a great way to stay out of the heat. Both Whole Foods and Fresh and Easy have chicken already cooked off the bone and cut up just for you if you don’t want to purchase a whole rotisserie chicken.
¼ cup of mayonnaise
1 teaspoon curry powder
1 cup of cooked chopped chicken
¾ cup peeled chopped apple
1/3 cup chopped celery
4 tablespoons raisins or dried cranberries
1/3 cup toasted almond slivers also found in a package ready to toast (or sometimes I use cashews)
Combine all ingredients and serve over fresh lettuce or it makes a great sandwich filling served with pickle slices, and maybe some fresh fruit.
