Recipe of the Week: Gourmet Waldorf Salad

2 large Gala apples, coarsely chopped

1 large Fuji apple, coarsely chopped

1 large Granny Smith apple, coarsely chopped

1 celery rib, finely chopped

1 cup lemon yogurt

3 tablespoons mayonnaise

1/2 cup chopped walnuts

1 cup mini marshmallows (optional)

1 cup granola (optional)

 

Directions: 

In large bowl combine the apples, celery, and walnuts.  Blend together the yogurt and mayonnaise and mix gently with the apples.

Stir in marshmallows just before serving; top with granola,  if desired.

It sounds great. Particularly without all the options.
