Recipe of the Week–Green Beans and Bacon Southern Style

Ingredients:

3 lbs of fresh string beans

4 strips of thick slice bacon (thin is ok too)  We buy the least expensive available.

1 tsp of salt

1 tbls of sugar

 

Preparation:

  Strip out the strings in the crease in the beans.

  Break the beans into 2 inch pieces

  Rinsed and ready for the pot

Cooking:

  Fry the Bacon in the bottom of the pan until the fat is rendered from the Bacon,

DO NOT COOK UNTIL CRISP!

  Remove bacon and set aside on a paper towel

  Stir (sauté) the green beans in the bacon grease

  Cover with water and add 1-2 Tablespoon of sugar and 1 Teaspoon of salt

  Push the bacon strips down into the beans

 Cooking Time is about 2 hours

 When beans have changed color it is time to taste.

When they are tender and delicious it is time to eat
