Recipe of the Week: Orange-glazed carrots









1-1/2 lbs baby carrots
Boiling water
1 t. salt
¼ cup orange juice
1 T. sugar
2 T. butter or margarine
3 medium oranges, cost thinly sliced


1. Wash carrots in cold water (unless already prewashed).
2. Place carrots in 10-inch skillet with tight-fitting cover. Add boiling water to measure 1 inch, and the salt. Bring back to boiling; reduce heat and simmer covered for 10 minutes, or until just tender but not mushy.
3. Drain; cool 10 minutes.
4. In medium skillet, combine orange juice, sugar, butter and orange slices. Add carrots, simmer gently, spooning glaze over carrots, 5 to 10 minutes or until tender.
Makes 6 servings
