Recipe of the Week—Pilar’s Maple Banana Bread

ailment times;”>1 cup of flour (whole wheat or spelt) 3/4 cup of oat flour
2 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 1/2 tsp of nutmeg 1/2 tsp sea salt
1 cup of overripe banana (puree inn a blender) 1/2 cup of almond milk
1/3 cup of melted coconut oil 1/2 cup of maple syrup
1 tsp of vanilla extract
1/2 cup of grounded walnuts handful of chocolate chips
3/4 cup of shredded squash, zucchini or carrots (whatever you think you can hide in there).

Directions:

Oven to 350 degrees. In a large bowl, mix dry ingredients, separate bowl combine mashed banana, maple syrup, almond milk, vanilla and oil. Add wet to dry then add chocolate chips. Stir till well combined, wipe a loaf an lightly with coconut oil. Pour batter and bake 45 minutes. Or put in a muffin pan (24 muffins) for 15 minutes.
