Recipe of the Week–Pilar’s Oatmeal Cookies–Healthy and so good!

pilule times; font-size: 12pt;”>3 cups of oats (2 cups of oats and 1 cup of oat flour if you want more cookie like consistency).
1 cup of flour (whole wheat or any other) 1 cup of chocolate chips or raisins
1 cup of finely chopped walnuts
1 cup of honey (raw local honey tastes best). 1/2 tsp salt
1/2 tsp cinnamon 1/4 tsp nutmeg
1 tsp of baking soda 1/2 cup of applesauce
Wet Ingredients:
1 cup of melted coconut oil 1/2 cup of almond or rice milk
1 Tbl of flaxseed meal and 3 Tbl of water (egg substitute) 1/2 tsp of vanilla
*I also add shredded carrots and squash 1-2 cups
Directions:
Combine dry ingredients in a large bowl and mix well, add wet ingredients (together), mix well. Drop heaping tablespoons of dough onto greased cookie sheet. Bake at 375 degrees for 10-12 min or until brown on bottom.
