Recipe of the Week—Pilar’s Zucchini Carrot Bread

3 cups of flour (any kind) 1 cup of sugar
1/2 cup of honey 1 tsp salt
1Tbl baking powder 3 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp baking soda
3 Tbl of flaxseed meal with 9 Tbl of water (egg substitute) 1 cup of coconut oil – melted
2 tsp of vanilla
1 cup of grated raw zucchini 1 cup of grated raw carrots 1/2 of finely chopped walnuts
1/2 cup of raisins or chocolate chips
3 Tbl of unsweetened cocoa powder (optional)

Directions:
Mix all dry ingredients. Mix flaxseed mixture with oil and vanilla and add with raw veggies and walnuts. Mix well. Pour into muffin cups or a greased loaf pan. Bake at 325 degrees for 1 hour (loaf) or 15-20 min for muffins. Makes 2 loaves or 24 muffins.
