Recipe of the Week–Quinoa with Cashews

Ingredients
1 Cup Quinoa
2 Cups Vegetable Broth
1/4 to 1/2 Cup chopped Cilantro
1/4 to 1/2 Cup chopped Mint
3/4 to 1 cup Raw Cashew Pieces, toasted in oven at 400 for about 4 minutes
Juice of 1 Large Lemon
2-3 Fresh Tomatoes (Cut small)
2-3 Tbs. Extra Virgin Olive Oil
Pinch of salt, to taste (can add broccoli, onions, whatever your taste)
Directions:
* Cook Quinoa, prepared with Vegetable Broth, according to package directions. 1 cup Quinoa will take 2 cups water or Vegetable broth, leave after boiling for 20 minutes.
* Toss remaining ingredients together, add to cooked Quinoa at the end.
