Recipe of the week–Salmon Salad

Often the night I have salmon there is always leftovers, so not to waste I make Salmon salad the next night.
Ingredients:
1 bag of salad greens
1-2 green onions sliced
1 diced tomato
1 small cucumber
Top with salmon
Dressing
2 tbl. Dijon mustard
1 tbl. Red wine vinegar
¼ cup olive oil
Salt and pepper
