Recipe of the Week: Southwestern Salad

Ingredients and Directions:
Chopped up greens (You can use your favorite pre-packaged greens)
Cut up cooked barbequed chicken
Corn (Can use canned or fresh off the cob)
Diced avocado
Chopped tomatoes
Sliced Cucumber
Vinaigrette dressing (homemade or store bought but lite, low calorie, would be good) mix with a few tablespoons of barbeque sauce that’s what’s makes it Southwestern!
Top with grated cheese and tortilla strips and/or black beans
