Recipe of the Week–Spanish Quiche

Ingredients

8-9 eggs, beaten

2 heaping T. flour or cornstarch

1 t baking powder

8-12 oz. canned mild chills

2 cups cottage cheese

3 cups Monterey Jack cheese

Salsa

Directions

Layer of salsa on bottom of quiche pan or large pie pan Mix all other ingredients and pour onto salsa I first mix the baking powder and flour with the cottage cheese

Bake 350 for 50-60 minutes.
