Recipe of the Week–Summer Avocado and Shrimp Salad

Ingredients:

2 avocado cut up not too small

1lb cleaned and cooked shrimp, med or large

1cup diced tomato

4 thinly sliced scallions 

2 tbl. Lime juice

1 red bell pepper sliced           

Dressing:

¼ cup lime juice                          

1tbl Dijon mustard

½ cup vegetable oil

1 tbl. Minced shallot

Mix all ingredients and drizzle with dressing

A nice touch is a grating of lime zest and perhaps a sprinkling of mint leaves
