Recipe of the Week: Summer Pasta

It’s easy, versatile and light for a summer evening
Dice heirloom or cherry tomatoes (more flavor and they are in season)
Cook angel hair pasta following package directions (You can use thicker pasta but this my favorite)
Saute minced garlic in light virgin olive oil
Add cooked pasta and saute until coated
Remove from heat.
Add diced tomatoes, salt and pepper to taste, fresh squeezed lemon juice, fresh basil. For added zip add capers
Grate fresh Parmesan cheese on top
Will refrigerator nicely and is good served cold or warm.
