Recipe of the Week: Texas Caviar

One teaspoon of water
One teaspoon of salt
One cup of sugar
1/2 teaspoon of pepper
3/4 cup vinegar
1/2 cup of oil
Set aside to cool.
Wash and drain:
One can of black-eyed peas
One can of pinto beans
One can of shoe peg corn
Place above ingredients together in a bowl and add:
One small jar of pimento
One small onion, chopped
One green pepper, chopped
Pour cooled sauce over vegetables in bowl; cover; chill in refrigerator for at least one hour – up to twenty four hours. Drain liquid right before serving.
Serve with Tostitos Scoops.
