Recipe of the Week: Tomato Soup












1-2 Shanks beef or lamb
1 Cinnamon stick
4 cups Water
½ cup uncooked rice
1 lb. well-ripened tomatoes, check squeezed and strained
Salt & pepper to taste.


Place shanks and cinnamon stick in pan of cold water. Cover and cook until tender. Add rice and cook for 20 minutes. Add tomatoes, medications salt, and pepper. Simmer for 15-20 minutes.
