Recipe of the Week: Cottage Cheese Pancakes with Honey Butter

Cottage Cheese Pancakes:


3 egg yolks
1/2 C Cottage Cheese
1/3 C milk
1/4 C all purpose flour
1/4 tsp salt, opt
1 egg white


Beat egg yolks until thick. Mix in cottage cheese. Blend in milk, flour and salt.
Beat egg white to soft peak. Fold into batter.
Let it stand about 5 minutes.
Pour onto hot buttered or oiled griddle or skillet.
Turn once, when edges baked and top is bubbly

Top with light syrup, jam or honey butter.

Honey Butter
1 C Butter, softened but not melted
1/2 C Honey, Add to butter gradually and cream until smooth
