Kneady Bakery’s Muffy the Vampire Slayers–Apple Cranberry Walnut Mini- Muffy’s

Yields About 30 Servings
Ingredients
• 1 cup water
• 2 cups sugar
• 2 cups grated apples
• 2 cups cranberries (diced)
• 3/4 cup butter
• ½ cup brown sugar
• 3 teaspoons ground cinnamon
• 2 teaspoons nutmeg, freshly grated (If you use dried spice, use 3 teaspoons)
• 1/2 teaspoon ground cloves
• 1 cup walnuts, chopped (You can roast these also)
• 2 teaspoons baking soda
• 1 teaspoon salt
• 3 1/2 cups all-purpose flour
Prep
Preheat the oven to 350°.
Combine the water, sugar, brown sugar, apples, cranberries, butter, cinnamon, nutmeg, and cloves in a saucepan; bring to a boil. Remove the pan from the heat and cool completely.
In a large bowl, stir the nuts, salt, and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended – DO NOT OVER MIX.
Fill greased mini- muffin tins with batter to the top. Bake for 15 minutes.
